Skyr Protein Pancakes

Ingredients

  • 200 g plain skyr
  • 1 large egg
  • 80 g flour (or oat flour)
  • 1 tsp baking powder
  • 1 tbsp sugar or sweetener
  • Pinch of salt
  • Splash of milk to loosen

Instruments

Mixing bowl,Whisk,Non-stick skillet

Prepwork

Preheat skillet over medium heat and lightly oil.

Steps

  1. Whisk skyr, egg, sugar. Fold in flour, baking powder, salt. Thin with milk to thick batter.
  2. Cook small pancakes on medium heat 2–3 min/side until golden and puffed.
  3. Serve with berries or a drizzle of honey.
