Skyr Protein Pancakes

Ingredients
- 200 g plain skyr
- 1 large egg
- 80 g flour (or oat flour)
- 1 tsp baking powder
- 1 tbsp sugar or sweetener
- Pinch of salt
- Splash of milk to loosen
Instruments
Mixing bowl,Whisk,Non-stick skillet
Prepwork
Preheat skillet over medium heat and lightly oil.
Steps
- Whisk skyr, egg, sugar. Fold in flour, baking powder, salt. Thin with milk to thick batter.
- Cook small pancakes on medium heat 2–3 min/side until golden and puffed.
- Serve with berries or a drizzle of honey.
